The lemon did the work I wanted from the matcha

It was lemon jelly, rather than matcha, that cut through the weight of this matcha parfait. It eased the richness of the cream, while the matcha that ought to have been the star barely came through for me. I had hoped the matcha itself would hold the whole dessert together, so I was left wishing for more.

The cold-brewed sencha was a striking contrast. Its flavor had a clear, clean quality, and the character of the tea I had been looking for in the parfait was unmistakable in the cup instead.

The Maruto Parfait [Matcha] made sense as something to try while sightseeing in Uji. Still, what stayed with me was less the matcha in the parfait than the clarity of the cold tea.
