Thick noodles, a surprisingly light touch

For yakisoba with such thick noodles, what stayed with me was how light it tasted. At よこたや, the chewy noodles in the mixed yakisoba seem to gather flavor with every bite.

The cabbage blends into the noodles while keeping its crunch. Pickled red ginger adds a change of pace. And, of course, the fried egg takes center stage. The texture of the noodles, the presence of the egg, the crunch of the cabbage and the lift from the ginger arrive one after another.

Eating it with a beer in hand made the end of the day feel real. It is a plate I would like to come back for at dinner.
